Goose Poop Chicken Enchiladas.  

1 cup chopped onions
1/2 cup chopped green pepper
2 tablespoons butter
2.5 cups rotisserie chicken
3tablespoons butter
1/4 cup flour
1tspn coriander
1/2 tspn salt
1/2 tspn garlic powder
1/2 tspn onion powder
2.5 cups chicken broth
1 cup sour cream
2 cups Monterrey Jack cheese
1 package fajitas sized (10 tortillas) 
1/4 cup goose poop or more to taste

Sauté onion and green pepper in 2tbspns butter until soft. Combine onions and peppers with chicken and GP. Set aside. 

In same pan melt 3 tablespoons butter. Add flour, coriander, salt, garlic and onion powder. Cook 2min stirring constantly. Add chicken broth. Cook until thick and continue to cook 2 more minutes. Remove from heat and add sour cream and 3/4 cup cheese. Return too heat until cheese is melted. Add 1/2 cup sauce to chicken mixture. Dip each tortilla in sauce and then stuff with chicken mix. Roll up and place in 9x13 greased pan. Cover with remaining sauce top with cheese. Bake at 350 for 30 mins. Serve with sour cream, rice and beans. Yummy!!
