Flying South Of The Border Burrito

1 T. Olive Oil

2 T. Minced Onion

2 T. Chopped Red Bell Pepper

! T. Coarsely Chopped Cilantro Plus Additional for Garnish

4 Cherry Tomatoes Sliced

2 T. Goose Poop

2 Large Eggs (Chicken not Goose)

2 Whole Wheat Tortillas

1/4 C. Shredded Cheddar Cheese

 

In a small non-stick skillet heat the olive oil. Add the onions and peppers and cook until the onions are translucent. Add cilantro (I prefer to scissor cut) and the sliced tomatoes. Mix in the Goose Poop and cook one minute. Stir in eggs and cook until desired doneness. Divide the egg mixture onto the tortillas and garnish with cheese and cilantro. Buen Provecho!
